simple put together pasta

Ingredients
  • 500 g pasta twists
  • 3 small courgettes
  • 1 kidney beans (1 tin)
  • 1 chickpeas (1 tin)
  • 2 carrots
  • 2 tuna in sunflower oil (2 tins)
  • 1 pinch Meditteranean smoked sea salt
  • 2 pinch dried mixed herbs
  • 2 pinch course black pepper
  • 2 dash olive oil
Instructions
  1. Heat a pan of water and add the pasta when hot.
  2. Cut the courgettes and add to the hot frying pan and start dry frying. Once the courgettes are browning slightly, add a dash of olive oil, dried mixed herbs and sea salt and cook for a little longer.
  3. Dice the carrots and add to the courgettes. The carrots should remain almost uncooked. They should be crunchy and just warm. Toss the carrots with the courgettes for more flavour. Add the pepper.
  4. Turn the hobs off and drain and rinse the pasta with cold water. Add all the ingredients together with a little more olive oil including the tuna, beans and chickpeas and serve.
