Dish full of fibre

large potatoes

black beans
(1 tin)

black eyed beans
(1 tin)

carrots

tbsp
olive oil

pinch
smoked mediteranean sea salt

pinch
dried mixed herbs

pinch
pepper
(optional)
Instructions

Cut the potatoes into quarters.
Put them into a saucepan of boiling water.

Grate carrots but do not cook them.
Add the herbs and salt to the potatoes.
When potatoes are almost soft, add the beans.
Drain off the water and serve with the raw carrots on top. Add the oil, little more salt if needed and mixed herbs.
